Aquavit - from Latin aqua vitae, water of life - is Norway's national spirit, a potato- or grain-based distillate flavoured with caraway and a varying selection of secondary botanicals (dill, fennel, anise, cumin, cardamom, citrus peel). The spirit is shared with Denmark and Sweden but the Norwegian version is distinctive in two respects: it is typically aged in oak barrels (the Danish and Swedish equivalents are usually unaged), and it is taken extremely seriously in the country in a way that surprises many international visitors.
The most internationally famous Norwegian aquavit is Linie Aquavit, named after the equator-crossing tradition that defines its production. Linie is matured in oak sherry barrels that are loaded onto working cargo ships in Oslo, sailed twice across the equator (with stops at Australian and other Pacific ports), and bottled on return to Norway. The motion of the sea, combined with the temperature and humidity changes of the tropical crossing, accelerates the maturation in a way that has become the brand's defining characteristic. The technique has been used since approximately 1907 and is genuinely without equivalent in any other major spirit tradition.
Beyond Linie, the smaller producers are arguably more interesting. Det Norske Brenneri (Atlungstad), Strane Brenneri, and several newer craft distilleries produce aquavit with regional botanical profiles - for example using local Norwegian dill, juniper, sea buckthorn or cloudberry. The Norwegian craft distillery scene has grown substantially since the early 2010s and the better small producers are now competitive with the established Scandinavian houses on quality.
For the visitor, aquavit is the spirit served with traditional Norwegian Christmas food (lutefisk, ribbe, smalahove) and at most serious traditional Norwegian dinners. The classic serving is small, very cold, taken in a single shot with a beer chaser and a spoken toast (skål). A serious Norwegian Christmas dinner without aquavit is essentially incomplete. The Vinmonopolet - the state alcohol retailer - carries an unusually wide range; for tasting, the better hotel bars in Oslo, Bergen and Trondheim usually offer flights of three to five aquavits with brief notes.
